Fine Lemon Filling


from Ella Barclay


Rind and juice of 1 lemon
1/2 cup sugar
1/2 cup cold water
3 teaspoons corn starch
Whites of 2 eggs remaining from cake.

Boil the lemon juice and rind with the sugar and water until sugar is dissolved

Then add corn starch mixed smoothly with a little water.

Cook three minutes and add the whites of the eggs stiffly beaten.
