Mock Oysters


Corn Fritters


corn pulp 2 cups
eggs 3
cream heavy 2 tablespoons
salt 1 teaspoon
pepper 1/2 teaspoon
butter melted 1 tablespoon
flour 2 tablespoon

Beat egg yolks, add corn, cream, salt, pepper, butter and flour.
Mix well
Beat egg whites stiff
fold in mixture
drop by teaspoons on hot griddle to form size of oyster size fritters
turn cook other side

serve with fried chicken other meats or as a supper dish

makes about 40 small fritters.
